        Kimmy Quick Italian Dish

2 Cans Hunts Spaghetti Sauce, (or your favorite kind)
1 Box Macaroni Shells
1 pound Hamburger
1/4 pound Italian Sausage (If you don't like Italian sausage, it can be left out.)
1 package of Pepperoni
Italian Seasoning
Garlic Powder
1 or 2 packages of Italian Cheese (according to how much cheese you like)

Brown hamburger and Italian sausage. Drain, add Spaghetti Sauce. Season with italian seasoning and garlic powder to taste. Add the pepperoni and simmer.

Cook Shells according to the directions on the box. When cooked add shells to the sauce that has simmered.


Pour all into a baking dish. Top with Italian cheese. Cook till cheese is melted. Serve with garlic bread or garlic toast.

You can also add onions, green and red peppers to this recipe. My kids hate them so I stopped adding them to mine.

My kids, their friends, and ALL my ex's (hehehe) have loved this dish. Enjoy!!

NORWEGIAN BEET SALAD
1 beet 6oz.
1 carrot 6 oz.
1 apple 6 oz.
1 C chopped pecans
1/2 C shredded coconut
2 Tbs lemon juice
1 Tbs minced ginger
1 Tbs sesame oil

Grate beet, carrot and apple.  Add all ingredients and stir.


 
This is not really a recipe but a technique:  Garlic cloves are hard to peel and if you cook garlic at too high a heat it can become bitter.  To quickly peel garlic, microwave the cloves you want to use for 25 seconds - the peel comes off a lot easier, especially if you give it a smash.  To get a great "roasted garlic" that is easy to peel, smash, throw in the saute pan with veggies or to spread  on toasted Italian/Cuban/French bread simply place a whole head of garlic in the microwave, set power at 25%, cook for 6 minutes.  Allow it to cool before peeling; it will be soft and sweet.

Anyhow, here's the recipe for the best rice pudding(my Mom's)

Preheat oven to 350 degrees

1/2 cup white rice
1 quart milk
1/2 cup sugar
1/2 tsp salt
1/4 nutmeg


Mix all ingrediants together and bake for about two hours or more.
If you want it more like custard, beat an egg and put in about 10 minutes
before its done.
